¡Hola! Nothing like September and the beginning of spring! Spring in September? Why we must be talking about a place like Chile, where spring is marked by the multi-day celebration known as Fiestas Patrias! And lo and behold it’s pineapples everywhere during that week - especially the Terremoto or “earthquake,” the Chilean cocktail famously topped with scoops of pineapple ice cream!
In the spirit of that Terremoto—though without the spirits, and churned as a refreshing sorbet instead of ice cream—it’s good old-fashioned pineapple sorbet!
Ingredients
Pineapple puree, Water, Sugars [Sugar, Light corn syrup (Corn syrup, Salt, Vanilla), Dextrose], Lemon juice, Cornstarch, Natural stabilizer (Xanthan gum, Guar gum).
